Our cooking class doesn’t just teach you recipes. It gives you the keys to a culinary tradition.
The Experience
9:00 AM — Souk Shopping
Meet your chef (a Marrakech native who has been cooking Moroccan food for 30+ years) at the medina entrance. Together, you navigate the spice souk, selecting fresh ingredients: saffron from Taliouine, preserved lemons, argan oil, cumin, and the legendary ras el hanout blend (a mixture of up to 40 spices). You’ll taste and smell as you go.
10:00 AM — The Riad Kitchen
Settle into our beautiful riad kitchen — a cool, tiled space with natural light and the smell of charcoal and spices. Your chef demonstrates the foundational techniques of Moroccan cooking:
- How to build a tagine from scratch (chicken with preserved lemon & olives, or lamb with prunes & almonds)
- The Moroccan art of chermoula marinade
- Making couscous from scratch (steamed, not boiled)
- Pastilla — Morocco’s famous savory-sweet pigeon pie (we use chicken)
- Moroccan mint tea ceremony
12:30 PM — The Feast
You eat what you cooked. Sitting on traditional cushions around a low table, you share a full Moroccan spread — the aromas alone are worth the trip.
What You Take Home
A beautifully printed recipe booklet with all the dishes you prepared, plus a curated spice bundle from the souk. Everything you need to recreate the magic at home.
